WATSONVILLE — The local meat processing businesses, Freedom Meat Lockers and Corralitos Market & Sausage Co., are ramping up their stock to handle demands for the Memorial Day weekend.

Howard Walker, owner of Freedom Meat Lockers, said the holiday typically brings shoppers through the door for a host of meats that go on the barbecue for family and company gatherings.

“Our tri-tip, chicken and skirt steak marinades, all made in house, are among our top sellers,” he said. “A lot of people go for our homemade sausages that barbecue real well.”

The business specializes in custom cut meat and award-winning smoked meats, including, 30 varieties of sausages, all made in house.

The business now offers a “get it and go” style of freshly packaged meats, a bulk-designed product that can not only save money, but can also come out of the package and right onto the grill, manager Will Panis said. Their deli section (724-1167) can handle large sandwich and salad orders, ideal for company meals.

Meanwhile, Dave Peterson, president of Corralitos Market & Sausage Co. said his company will prepare 3,950 pounds of various meats and sausages just for the holiday weekend.

“Our refrigerators are packed right now,” Peterson said. “Things are really picking up. Our customers should know that we buy all our beef fresh — never frozen. We offer a huge selection of all natural meat goods that are prepared right here in house for the holiday.”

Peterson said their Cheesy Bavarian is their top seller and goes well on the barbecue.

“We have a big selection of sausages that include Kobasica, Chicken Santa Fe, and Creole,” Peterson said.

The early-day style market, that also includes a gourmet deli, also offers a wealth of homemade marinated meats that are barbecue-ready. They also specialize in manufacturing their own fresh and smoked meat products including: ham, bacon, sausages, jerky, beef sticks, smoked salmon and more.
