Got holiday plans? Inviting family and friends for Thanksgiving? This is the time to get your order in for holiday meats that might reach the dining table.

Sarah Lewis, manager at Freedom Meat Lockers, said  a top seller is their prime rib.

“And we have our award-winning smoked turkeys,” she said. “We can do wine and spice, brined or fresh turkeys. We could also do our state and national award-winning hams, which could be sliced, tied, and come with the honey glaze. You can also order a prime rib that we can customize by cut, tie, and season to the size that you need to fit your crowd.”

She advised people to get orders in right away.

“That would be greatly appreciated; that way we can guarantee exactly what you would like and we can get it all squared away for you,” Lewis said. “We also have our famous wine and spice skirt steak, chicken breast, chicken thighs, and don’t forget the tri-tip and smoked sausage. All of our smoked sausages are made here in-house; and all the ingredients are fresh, local, organic.”

Meanwhile, at Corralitos Market and Sausage Company, owner Dave Petersen said he had to get his overall turkey order back in April.

He said some of the most popular orders are the bone-in and boneless ham.

“We prepare all of this in house,” he said. “applewood sugar-cured, applewood smoked. And they’re fully cooked; and they go a long way for your money.  We also feature Mary’s all natural turkeys as well. We’ve been doing those for years.”

He also carries smoked turkeys that only need to be heated up, not cooked.

“You have to make your dressing on the side because you can’t stuff a smoked bird.”

Petersen said his market can ship orders to your home via FedEx, DHL, or UPS. But people need to know that shipping this year is not cheap with gas prices being so high.

Both businesses carry a huge array of house-made meat marinade packages, sausages and a full butcher counter.

Corralitos Market & Sausage Co. can be reached at 722.2633 and Freedom Meat Lockers at 724.4355.
